Food and Lit for April 

I found lovely selections at the library. 

I picked up a guide -National Geographic Traveler- at last summers library sale (last pic) I find these very helpful in imagining travel to the places I’m reading about. 

Thailand historically known as Siam and officially the Kingdom of Thailand, is a country in Southeast Asia. The country is bordered to the north by Myanmar and Laos, to the east by Laos and Cambodia, to the south by the Gulf of Thailand and Malaysia, and to the west by the Andaman Sea and the extremity of Myanmar. Thailand also shares maritime borders with Vietnam to the southeast, and Indonesia and India to the southwest. Bangkok is the nation’s capital and largest city.

The country’s most prevalent religion is Theravada Buddhism, which is an integral part of Thai identity and culture. Active participation in Buddhism is among the highest in the world. Thailand has the second-largest number of Buddhists in the world after China.

I’m enjoying learning about this country as I was taught nothing about it at any school I attended. 

Also this is the origin of Siamese cats! 

Thai Coffee

Thai Coffee

Ingredients

2 tablespoons ground coffee beans

¼ teaspoon ground cardamom

water

2 tablespoons sweetened condensed milk

Directions

  1. Place coffee and cardamom in the filter of your coffee machine. Place enough water to make 2 cups of coffee in the machine. Turn on the coffee machine.
  2. Pour brewed coffee into 2 coffee cups, and stir 1 tablespoon sweetened condensed milk into each cup. Serve.


Ingredients

  • 1 1/2 cup rice (350 g)
  • 1 1/2 cup coconut milk* (400 ml)
  • 1 1/2 cup water (400 ml)

Instructions

  • Add the rice, water and coconut milk to a small pot or saucepan on medium-high heat. Bring it to a boil. As soon as it starts bubbling, reduce the heat to medium-low, and leave it to gently simmer.
  • Do NOT put the lid on. Adding a lid will keep the steam inside the pot, and will result in sticky, soggy rice.
  • Stir occasionally to prevent the rice from burning in the bottom. Allow the rice to keep simmering until all the liquid is absorbed. Then, remove it from the heat and cover with a lid to keep the rice warm until you are ready to serve it
